A few years ago, we went to a popular Italian style restaurant in Taipei, where we tried for the first time an Italian dish called ‘bruschetta’. We didn’t really know to make any appetizer recipes, but this one is easy.

Get some fresh tomatoes, garlic, olive oil, basil, good bread. Don’t forget the cheese, too: a hard parmesan is good, though other hard cheeses are also good.

I can’t stress enough that choosing good olive oil is essential for this dish. It reallly makes or breaks the dish.

Chop up the tomatoes, add the salt, pepper, herbs, etc. and make a simple paste.

Oil the bread then put the bread in the toaster. After you toast the bread, put a spoonful on each slice. Add one very thin slice of the hard cheese. And enjoy.
