Just made a lovely cake. First time I baked a cake in 30 years, I think!
Simple Victoria Sponge cake… Recipe courtesy of Mary Berry, too. Suggestions for next time: slightly more baking soda, lower baking temperature, use smaller granule sugar, use less (or different) vanilla essence, and try not to take out the cake too early! Adding some lemon peel might help, too.
For serving, I will cut the thicker cake in two, and put the filling in prior to serving on some nice http://www.premiertablelinens.com linens, perhaps with a few Victorian style frills.
After all, Queen Victoria did enjoy a bit of cake, like this.
Quite interesting to rediscover why cakes are particularly unhealthy: eggs, sugar, flour, cream & loads of butter or fat!
